Olive oil = 2 tablespoons
Think about an unfiltered…extra-virgin…olive oil produced from an ancient assortment of olive…tree ripened…that’s been ice pressed or hasn’t been subjected to heat.


Lemon juice, freshly squeezed = 1 tablespoon
This author likes to have on hand frozen, freshly squeezed, citrus juices of…lemons, limes and oranges…for ultra convenience. Then…it’s just get the jar of juice out of the freezer, and thaw it in a scorching water bath – bain marie.


10} To the blender…add the contents of the 3-quart pot.
Steer clear of spurting… Mindful pureeing hot liquids. Start out on a minimal speed…gradually enhance speed.
11} Puree til smooth.
twelve} Divide soup among four bowls.


The Finishing Touch
Garnish…each of the 4 bowls…with two to 3 tablespoons of the minced parsley.
