We have twins that commenced school this year.  It is this kind of an intriguing time in the loved ones when your children go off to college.  One of them attends the University of Kansas (KU) just 30 minutes from home but his twin sister is studying near Vienna, Austria.  Talk about a hard time for a mom, leaving your child in a foreign city across the globe!  She is fairly the adventurer and has loved every minute of it but was prepared to come residence by Christmas break.  She emailed her “demand” record of need to have foods just just before she returned to the States.  She’s had ample Weinerschnitzel for a lifetime.  She needed mom’s very good ole trend meatloaf and sweet potato pie.  So when we were rejoicing getting all of the kids collectively yet again for a meal and absolutely everyone raved about my pies, I imagined I must share this recipe. SWEET POTATO PIE

  • 6 medium sweet potatoes

  1. Boil sweet potato entire in skin for forty  minutes, or till completed. Run cold water over the sweet potato, and remove the skin. Scoop potato into your mixing bowl.

  2. Include butter, and combine effectively with mixer. Stir in sugar, milk, eggs, nutmeg, cinnamon and vanilla. Beat on medium pace until finally mixture is smooth. Pour filling into an unbaked pie crust. Add pecan mixture to best of pie.

  3. Bake at 350 degrees F (175 degrees C) for 45 to 50 minutes, or till knife inserted in center comes out clean. Pie will puff up like a souffle, and then will sink down as it cools.
