Healthier recipes: sun-dried tomato, aubergine and pine-nut pasta


My favourite summer season salad is made from roasted aubergine, sun-dried tomatoes, rocket and pine nuts. It is scrumptious, but not fairly hearty sufficient for these wintry days. So I determined to tweak it a bit and include some pasta. The sun-dried tomatoes simmer down when cooked with plum tomatoes, basil, salt, olive oil and courgettes to make a wonderfully rich, chunky sauce, which is enhanced by the tender, roasted squares of aubergine, the crunchy toasted pine nuts and the somewhat bitter rocket. It is really a ideal effortless supper that will fill you up nicely and it actually requires twenty minutes.




10 plum tomatoes


one courgette


fresh basil leaves


⅔ cup sun-dried tomatoes


½ jalapeño pepper


½ cup pine nuts


Pasta (I like brown rice or quinoa gluten-free pasta)


two handfuls of rocket


Start off by slicing the aubergine into bite-sized cubes, then sprinkle salt all above them to allow them to sweat – without having this step they will have a somewhat nasty bitter taste.


Heat the oven to 190C/gas mark five. Right after about 15 minutes rinse the aubergines and location them in a baking tray with olive oil, salt and a sprinkling of dried herbs – I like oregano and rosemary. Bake for 20 minutes, stirring after.


Slice the plum tomatoes into eighths and the courgette into thin half-moons, and spot them in a saucepan with a handful of torn of basil leaves, the sun-dried tomatoes, jalapeño pepper, a drizzle of olive oil and a sprinkling of salt. Let the pan to simmer for 10-15 minutes, even though you cook the pasta.


Just prior to the aubergines are prepared add the pine nuts to their baking tray and bake for a couple of minutes, until they begin to brown slightly. Then combine the aubergines and pine nuts with the vegetable sauce and the drained pasta, adding the rocket as you place the pasta into bowls.
